What is Fair Trade Coffee?
The principles of Fair Trade empower coffee farmers and farm workers to lift themselves out of poverty by investing in their farms and communities, protecting the environment, and developing the business skills necessary to compete in the global marketplace. These principles include among others, a guaranteed minimum fair price for their coffee, fair labor conditions, and direct trade relationships, where importers purchase from Fair Trade producer groups, thereby eliminating unnecessary middlemen and empowering farmers to develop necessary business acumen.
What is Coffee Industry Board Certified coffee?
MIRE Enterprises LLC d/b/a Reggie’s Roast is one of a few licensed USA importers of Jamaica Blue Mountain coffee. All of our coffee is certified by the Coffee Industry Board of Jamaica lending authenticity to the product. Jamaica Blue Mountain coffee is distinguishable as it is the only type that is imported in wooden barrels. I copy of a recent certificate is here.
What are the best preparation methods?
We recommend that you purchase freshly roasted whole bean coffee packaged in nitrogen flushed vacuum-sealed bags with one-way valves. Grind your coffee beans immediately prior to brewing and consume your coffee within two to four weeks after being roasted.
What are coffee beans?
In essence, the red coffee "cherry" is a fruit, which has to be converted into the commodity that is called the coffee bean. Coffee beans are the seeds of the coffee cherry, with each cherry containing two seeds.
What is a peaberry?
The normal development of the coffee cherry creates two seeds (beans) that grow with their flat sides facing each other. Infrequently (about 3% in the case of Jamaica Blue Mountain Coffee), one seed fails to thrive and a single, round bean fills the available space. Often sorted out and sold separately, these single beans are known as "peaberries". This bean produces a more concentrated flavor and the Jamaica Blue Mountain Peaberry is the choice of the "Coffee Connoisseur".
What is the difference between dry processing and wet processing?
This refers to how the pulp is removed from the bean. Dry processing is the oldest method of processing coffee where cherries are washed and then spread out on drying racks to dry in the sun for several weeks, or alternatively, are dried by machine. Wet processed beans have their outer skins removed by machine processing, then the fruit with the exposed pulp is allowed to ferment in tanks where bacteria and naturally occurring enzymes consume the pulp. The beans are then washed and dried, also either by sun or machine, and the dried beans are then milled to remove the remaining layers.
What is the difference between the different varieties of coffee plants?
All coffee beans come from plants in the genus Coffea. Within this genus are many species of plants; however, only two are of commercial importance, i.e., Coffea arabica, and Coffea canephora, the latter more commonly called robusta. Arabicas are considered the more flavorful, with lower content and is usually grown in higher elevations primarily in mountainous terrains with appropriate shading. Robustas are grown on vast plains and have higher caffeine content.
Can I roast coffee at home?
Home roasting is an excellent option if you do not have access to freshly roasted beans. Even with basic experience, you can get better quality coffee than the stale beans you've grown used to; many new home roasters are amazed at the quality of their coffee even after one or two roasts Coffee stales quickly; overall, you want beans that were roasted anywhere from one day to about a week and a half later—two weeks if whole beans and stored properly. At this time, we do not offer unroasted beans.
