The principles of Fair Trade empower coffee farmers and farm workers to lift themselves out of poverty by investing in their farms and communities, protecting the environment, and developing the business skills necessary to compete in the global marketplace. These principles include among others, a guaranteed minimum fair price for their coffee, fair labor conditions, and direct trade relationships, where importers purchase from Fair Trade producer groups, thereby eliminating unnecessary middlemen and empowering farmers to develop necessary business acumen.
All Jamaican Coffee grown in the Blue mountains must pass the strict guidelines of the Coffee Industry Board of Jamaica. These guidelines ensure the coffee that is produced is Certified Authentic in size, quality, and growing region and can be called Jamaica Blue Mountain. This certification is not easily attained, and is a privilege Reggie's Roast Coffee has upheld for several years.
We recommend that you purchase freshly roasted whole bean coffee packaged in vacuum-sealed bags with one way valves. This allows the natural gasses to escape and keeps the oxygen from affecting the coffee. Invest in a grinder and grind your coffee beans immediately prior to brewing. Using a French Press will yield the most flavor from your beans, and is the most strongly recommended brewing method. Though it requires more effort, it is well worth it!
In essence, the red coffee cherry is a fruit, which has to be proceesed in order to yield the coffee bean. Coffee beans are the seeds of the coffee cherry, with each cherry containing two seeds, and thusly two beans. In rare occasion, the coffee cherry will produce only onme bean with a higher concentrated flavor. These rare delights ar known as the PEABERRY.
The normal development of the coffee cherry creates two seeds (beans) that grow with their flat sides facing each other. Infrequently (about 3% in the case of Jamaica Blue Mountain Coffee) a single, round bean fills the available space. Often sorted out and sold separately, these single beans are known as "Peaberries". This bean produces a more concentrated flavor and the Jamaica Blue Mountain Peaberry is the choice of the Coffee Connoisseur.
This refers to how the pulp is removed from the bean. Dry processing is the oldest method of processing coffee where cherries are washed and then spread out on drying racks to dry in the sun for several weeks, or alternatively, are dried by machine. On our farms, we use Wet processing. The beans have their outer skins removed by machine processing, then the fruit with the exposed pulp is allowed to ferment in tanks where bacteria and naturally occurring enzymes consume the pulp. The beans are then washed and dried, also either by sun or machine, and the dried beans are then milled to remove the remaining layers.
All coffee beans come from plants in the genus Coffea. Within this genus are many species of plants; however, the two we all know by common name arabica and robusta. Arabicas are considered the more flavorful, with lower caffeine content and are usually grown in higher elevations primarily in mountainous terrains with appropriate shading. Robustas are grown on vast plains and have higher caffeine content with more hearty tones in their taste.

The age old question.... Some will swear by the freezer, some say the fridge, opponents of the cold box say the moisture will affect the coffee. Everybody has there own little trick, my cousin Oliver locks his coffee in a safe behind a portrait of his Uncle Herschel, and swears that's what makes Reggie's Roast taste so wonderful! We recommend investing in a grinder, purchasing WHOLE BEANS and storing them in an airtight container in a moderate climate.
